Last year was the first year I hosted Thanksgiving. A side dish that was the biggest hit was squash casserole, a recipe given to me by my fiancé’s mother. I recommend you all give this recipe a stir.
Squash Casserole
1/2 cup butter
3/4 cup chopped onions
15 Ritz crackers, crumbled
2 eggs beaten
Salt & Pepper to taste
2 lb yellow squash
1/2 tsp tabasco
1 cup of cheddar cheese
1/2 cup melted butter
1-1/2 cup of Ritz cracker crumbs
Preheat oven to 350. Slice the squash and cook until tender. Meanwhile, saute the onion in 1/2 c butter. Mix the onions with the squash and add 15 Ritz crumbled, 2 eggs beaten, cheese, tabasco, salt & pepper and stir well. Make sure not to let the egg cook while stirring on stove top. Place the mixture in 2 quart casserole dish. Combine 1/2 c melted butter with 1-1/2 c Ritz crumbled and sprinkle mixture over casserole. Bake at 350 until bubbly hot.
